Mitsukan Shiragiku Su was born in 1951 as a rice vinegar that goes well with sushi. Nowadays, not only domestic sushi restaurants, but this is also used in sushi restaurants all over the world.  Its mild acidity and the richness of sake lees go well perfectly with sushi rice.
